ESTATE FAMILY

The Chavet family has been growing vine since the 17th century, in the very heart of the Menetou-Salon vineyard and has succeeded in developing a unique know-how.
The company is now spread over a 23 ha wide estate and has invested in modern equipment in order to meet with new demands and standards. Their passion has remained untouched and they are proud to produce a high-quality wine in the respect of nature and tradition.

TERROIR
     
Kimmeridgian clay-limestone (small fossilized oysters)
Plot: Clos de Coquin (2,80 hectares)
               
VITICULTURE
           
Sustainable farming. Terra Vitis certification.
Pruning: Single Guyot

WINEMAKING
         
Short pre-fermentation cold maceration followed by light (low pressure) pres- sing. Vinification regulated by temperature control with regular aeration. Aged on fine lees for 6 months with daily tasting and resuspension of the lees for 2/3 of the cuvée. Aged in Centre-Loire oak barrels for 1/3 of the cuvée.

TASTING & FOOD PAIRINGS
             
Appearance: Pale gold in colour.
Nose: An open nose of candied yellow fruits (apricot, mango, roasted pineapple), with a smoky mineral touch.
Palate: A full and fleshy attack with lots of roundness, enhanced by a vibrant mineral freshness. This slightly over-matured wine is harvested one week after the other cuvées, which gives it abundant fullness and depth. The finish is fresh, vibrant and smooth.

This open, full-bodied and finely structured wine pairs wonderfully with white meats (poultry or blanquette de veau), fish in sauce and charcuterie. It is the perfect complement to a variety of cheeses, from tangy blue-veined Roquefort and Fourme d'Ambert to creamy, soft Camembert and Brie de Meaux.

The Chavet family has been in Menetou-Salon since the 17th century. The ancestral vineyards, handed down from generation to generation, are cultivated with the greatest respect for the vine and its environment.

A winegrower does not inherit the vineyard, he or she is its guardian for future generations. It is in this spirit, and with the belief that in order to obtain a great wine it is necessary to accompany and preserve nature, that the estate has, since 2002, had Terra Vitis certification, a label that certifies that the wine is produced using sustainable viticulture techniques.
Biodiversity is our priority in the vineyard. This is why we no longer use weedkillers and favour the use of grass cover and soil management techniques. In the cellar, we accompany the natural transformation of the grapes with extreme gentleness, limiting our interven- tions to the strict minimum, according to the daily tastings.
All our wines are aged - from 6 months in vats to 18 months in amphorae and barrels - in order to reveal the depth and essence of our great terroir.
