ESTATE HISTORY

Back in the 1st century BC, the Romans – pioneers of winegrowing in Gaul – founded one of the very first wine-growing estates in France.

From the 10th to the 18th century, the Lérins monks turned it into a wine-growing priory, and a superb underground cellar, built in the 12th and 16th centuries, still in use today.

Since 1740, the same family of French nobility has handed the Château down from one generation to the next, and especially from one woman to the next. The only man to have been at the head of Château de Saint-Martin was Count Edme de Rohan-Chabot, a well-known figure in the world of wine. Now, Adeline de Barry, his granddaughter, the current owner of Château de Saint-Martin, wants to share that rich historical past via her wines. 

TERROIR

Château de Saint-Martin is a lovely 100-hectare estate with 50 hectares of vineyards. One of the first major wine and olive growing estates in France.

VITICULTURE

The château gets inspiration from the fundamentals of sustainable, organic and biodynamic agricultural movements, taking the best from each one... and composing its own environmentally friendly strategy!

Opposed to the massive chemical treatments used by classic methods, regenerative agriculture proposes a treatment adapted to each situation and tries to keep chemical interventions to the strict minimum. In between the traditional and organic production methods, it uses agro-pharmaceuticals, but without overdoing it.

It is defined as winegrowing with respects for the environment. Its methods seek to maintain the biological diversity of the vineyard ecosystem and its surroundings. Reduced chemical treatments in the vineyard are made possible by methodically monitoring each plot based on observing nature and specialized techniques.

WINEMAKING

Ultra-modern winemaking cellar, with its stainless steel vats, built in Monomur bricks, provides extremely effective natural thermal insulation. 

TASTING & FOOD PAIRINGS

White wine whose golden colour is clear and shiny, with green and silver hues.
Nose: explosion of exotic fruit (passion fruit, etc.) and white flowers (jasmine, etc.)
On the palate, pleasant complexity on floral and citrus notes with a mineral finish.
Nice and unctuous long finish.

Serve between 8°-12°C. Pairs well with appetizers, seafood, fish en papillote, goat cheese. Dessert: almond tart.
