ESTATE HISTORY 

The Chavet family has been in Menetou-Salon since the 17th century. The ancestral vineyards, handed down from generation to generation, are cultivated with the greatest respect for the vine and its environment.  

TERROIR

Soil: Clay-limestone (Kimmeridgian limestones).

VITICULTURE

Bunching, systematic and repeated tillage under and between rows, trimming, harvest in green, partial leafing.

A winegrower does not inherit the vineyard, he or she is its guardian for future generations. It is in this spirit, and with the belief that in order to obtain a great wine it is necessary to accompany and preserve nature, that the estate has, since 2002, had Terra Vitis certification, a label that certifies that the wine is produced using sustainable viticulture techniques.
Biodiversity is our priority in the vineyard. This is why we no longer use weedkillers and favour the use of grass cover and soil management techniques.

WINEMAKING

Harvesting exclusively by hand.

Slight maceration before cold fermentation. Winemaking under temperature control. Natural fermentation by the "indigenous" yeasts of the estate. Aging in stainless steel vats on fine lees.

TASTING & FOOD PAIRINGS 

Eye: pale gold with green hues.
Nose: Open nose, lemony, grapefruit, enhances delicate floral notes (linden and mimosa). Spicy notes, white pepper.
Palate: The attack is supple, roundness. The palate is balanced, on freshness, finesse and elegance. Lemon accents mixed with exotic fruits (mango, passion fruit). A fresh and coated finish with a plump length.

Dry wine and fresh to consume between 8 ° and 10 ° as an aperitif, accompanies with wonder fish, seafood, crustaceans, white meats, cheese of goat, county.
