ESTATE HISTORY 

Back in the 1st century BC, the Romans – pioneers of winegrowing in Gaul – founded one of the very first wine-growing estates in France.
From the 10th to the 18th century, the Lérins monksturned it into a wine-growing priory, and a superb underground cellar, built in the 12th and 16thcenturies, still in use today.
Since 1740, the same family of French nobility has handed the Château down from one generation to the next, and especially from one woman to the next. The only man to have been at the head of Château de Saint-Martin was Count Edme de Rohan-Chabot, a well-known figure in the world of wine. Now, Adeline de Barry, his granddaughter, the current owner of Château de Saint-Martin, wants to share that rich historical past via her wines.

TERROIR

Soil: Clay-sandstone soils
Surface: 50 hectares
VITICULTURE

30 to 80 years old vines 
Sustainable farming: natural methods. Vines are treated using essential oils. Natural mowers and natural fertilizer spreaders.
Horse manure in the vineyard.

WINEMAKING

Mechanical night harvest. Skin maceration for 6 hours and pressing. Alcoholic fermentation from 13° C to 15° C.

TASTING & FOOD PAIRINGS 

Rosé wine with peach colour and golden hues. The nose is subtle and elegant with scents of violet, jasmine and rose petals as well as notes of ripe wild peach, lychee and mango. Fresh and fruity nose with a palate of heritage rose followed by blood orange. A velvety rosé wine with very nice length. A gastronomic wine.

Rosé wine to be served between 8°-10°C, paired with sea bream à la provençale, salmon à l’unilateral (cooked on one side), roast duck breast with cherry compote, or grape-stuffed quail.
