ESTATE HISTORY

Jean-Pierre Boisson, former long-serving mayor of Châteauneuf-du-Pape, runs Domaine Père Caboche with his children Emily & Nicolas. Members of the Boisson family have been both winemakers and blacksmiths for generations. The family nickname of Caboche derives from the old Provençal word for ‘horseshoe nails’ and their Vieilles Vignes cuvée is named after Elisabeth Chambellan, a local blacksmith’s daughter who married Jean-Louis Boisson in 1772.

TERROIR

We have 4 different soils: limestone, pebbles, sandstone-clay and sands. But the most important place of our vineyard is located on the famous plateau of «la Crau», where we have the most part of our Grenaches.

VITICULTURE

The vineyard is closely watched by the Boisson family, with the support of the Vaucluse Agricultural Chamber, and interventions are decided upon weekly parcel observations. The work on the ground in the row takes over using weedkillers: for instance, some parcels are worked on with horses, while others have the whole grounds turned over. Weed and use of organic matter improve the structure and the microbial life underground. This will to diminish pesticides is very well implanted in Emilie Boisson’s strategy to protect and run the vineyard: she spends a large amount of time and energy to apply and evolve more and more towards respect for the environment and people’s health.

WINEMAKING

Harvest by hand, picked when fully mature and also sorted by hand, destemming according to grape variety and vintage followed by crushing, permanent temperature control during fermentation, traditional maceration (about one month), ageing in big oak barrels called "foudres" and stainless steel tanks.

TASTING & FOOD PAIRINGS

The color is deep red.

The nose is intense with aromas of ripe red and black fruits (black cherry, strawberry jam) with soft spices (bay leaf, white pepper), notes of leather freshly tanned and a hint of violet.

This is a full-bodied and velvety wine, on gently spiciness and minerality. The palate holds flavors of the nose with fruits. The tannins are melted. Long and silky length on a touch of liquorice finish.

This Châteauneuf-du-Pape wine is complex and elegant combined with a great freshness. It is going to evolve nicely.

Operating temperature : 16-18° C
