ESTATE HISTORY

Giorgio Cavanna has two true loves, his family and wine. As a young man he worked on the Tuscan estate acquired by his father and partners. It was Castello di Ama that gave Giorgio his love of the land, and he has repaid these dues by doing so much for the worldwide reputation of Chianti Classico and its grape, the sangiovese. In 2000 he acquired the Grand Enclos that he has brought back to high quality and notoriety with the help of Léon family (Mouton Rotschild, Opus One, Almaviva, Les Trois Croix).

VITICULTURE

A selection of some of the oldest (60 years) Merlot and Cabernet Sauvignon (35 plus).CTwo manual leaf-thinning were conducted end of June and beginning of September in order to enable perfect ripeness and homogeneity of the grapes (direct sun rays on the berries).

WINEMAKING

The harvest is entirely done by hands in small crates. We conduct a double sorting out of the crop (before and after the de-stemming). The entire vinification process takes place in the barrels ( 100 % new) Punch down and pumping over is solely done by rotation of the barrels on their own individual rotating support (oxo-line).
Aging: In new (premium) French oak barrels for 14 to 16 Months.

TASTING & FOOD PAIRINGS

Color : intense deep dark red Nose : very ripe and rich with finely spiced notes of blackcurrants. Mouth : Delice du Grand Enclos surprises first for the exceptional quality of its tannins : pure silk… This red is intense with perfect balance and structure .While offering a great concentration and generosity , Delice remains an example of class and elegance in this dreamed vintage. Like its” brother” in white, this wine is the real ultimate top of the Terroir’s potential test for the Estate .

Pairs well with grilled and sauce cooked meat, venison, soft and hard paste cheeses, chocolate cake.
