ESTATE HISTORY

Jean-Luc and Paul Aegerter
The Aegerters, a father and son team, are creators and developers. They did not inherit an estate; they built it together, each contributing his own knowledge and aspirations.
United by the same passion for nature in general and vines in particular, Jean-Luc the pioneer and Paul the visionary freely chose this profession.
They began a shared story, developed their knowledge and allowed their ideas to mature. Paul, now the sole head of the family company, is continuing this family adventure and starting a new chapter: one about a flourishing business.

TERROIR

Between the slopes of Beaune and the mountain of Corton, Savigny-lès-Beaune covers nearly 375ha, of which 142ha is premier cru.
Savigny-lès-Beaune owes its name to the Latin “Silv-in-iacus” meaning “the land of the woods”. Indeed, the village is covered by more than 2000 hectares of forests. Soil: Limestone and sandy.
       
VITICULTURE
          
Sustainable farming.   Respect for the vine and its environment thanks to demanding specifications. The Domaine is converting to certified organic farming.
      

WINEMAKING

During the harvest the grapes are cut and sorted by hand, destemmed and then placed between 2 and 4 days in stainless steel vats for pre-fermentation maceration. The vinification is done in vats.
Ageing takes place in oak barrels, 50% of which are new barrels for 8 to 10 months.
           

TASTING & FOOD PAIRINGS

An elegant robe of a brilliant ruby. A nose with lots of small red fruits. A very fresh wine with a rather rich finish on the palate with a fine touch of wood.

Suggested food pairings: «Oeufs en meurette», grilled black pork from Bigorre.

Ageing and Service Temperature: between 15°C and 18°C
