TERROIR

Location: below the village of Pommard, beyond the national road Beaune-Chagny from "Les Sorbins" and "Les Crenilles" .
Area : 0,80 hectare
Altitude : 230 meters
Soil: clay-limestone 
Average yield : 50 hl/hectare

VITICULTURE

Average age of vines : 36 years. The vines are pruned in Guyot, disbudded and trellised using traditional Burgundian technique. Fertilization is rational. Regular dogging of the soils. Manuals successive sorting of the harvest. Sustainable Farming: Certification HVE3

WINEMAKING

The grapes are 100% destemmed followed by a pre-fermentation maceration for 3 to 6 days at 13°C. Vinified in stainless steel or concrete tanks, with punching of the cap and pumping over adjusted to daily tasting, the fermentation lasts between 2 and 3 weeks at a maximum temperature of 33/34°C.
The malolactic fermentation takes place during the 12 months aging in oak barrel, of which 5 to 10 % of new oak barrels.

TASTING & FOOD PAIRINGS

The situation of both localities, 400 m from the terroir of the appellation Pommard, confers to this Bourgogne an unusual richness for a regional appellation ; pretty ref fruits surround a beautiful frame and offer a great intensity to this wine.
To be drunk within 3-4 years, until 7-8 years.
Serving Temperature: Open the bottle 2-4 hours before the meal, serving wine at a temperature of 15°C.
Perfect with poultry, roast veal, beef stew, meat pies, cheeses such as Comté and Epoisses.
