ESTATE HISTORY

Founded at the end of the sixties, Domaine Olivier originates in the few vineyards left by Antoine Chevalier Moreau to his grandson Hervé.
By purchasing plots and new plantations, the estate first stretched out on Santenay then on Savigny-les-Beaune, Pommard and Nuits-Saint-Georges. During the development of their activity, the Oliviers endeavoured to exploit old terroirs, historically renowned for the production of Santenay white wines. These terroirs were abandoned for almost a century.
For a few years now, Antoine and Rachel Olivier have been managing all of the activities of the Domaine with one aim: Combining modernity and respect of Burgundian soils; and with the hope that you will enjoy tasting our wines as much as we enjoyed making them.

TERROIR

Domaine Olivier is located at the Southern extremity of the Côte de Beaune. 
Soils: Greish limestone occupy the high ground up to a height of 500 meters. Lower down the slope, starting at the 300 meter line, are oolitic limestones, white oolite, marls, kidney-shaped limestones, and lower oolite on a layer of marl. The location of the vineyard is ideal with exposures between East & South.

VITICULTURE

Organic farming. No chemical weeding, ploughing, biological control, yield control and manual grape picking in order to obtain the soundest and ripest grapes which can fully express the characteristics of their soils.

WINEMAKING

Manual harvest. Systematic and manual sorting of grapes, long traditional winemaking process, maturing of wine exclusively in oak barrels. Wine-making processes and maturing of wine are managed in the respect of each appellation and each terroir’s specifics, favouring the expression of finesse and elegance of Pinot Noir and of Chardonnay which are unique grape varieties on the estate.

TASTING & FOOD PAIRINGS

Medium, medium-plus colour. It shows a dark cherry fruit but coupled to higher- toned violet notes. There is intensity and very pretty, mouth-watering fruit. A good increase of flavour in the mid-palate and finally just a little strawberry in the finish.
Pairs well with veal, pork, game, poultry, salmon.
