ESTATE HISTORY
François Raveneau established the domaine in 1948 by combining vineyards that he had purchased with vineyards owned by the family of his wife, who was part of the Dauvissat wine family.
François was the first member of his family to bottle his own wine; previously the grapes had been sold to other estates to use. François's father, Louis Raveneau had previously owned a number of parcels of land in Chablis, but sold them all during the 1950s. Chablis was going through a difficult economic period due to increased competition from the Languedoc wine region which reduced the demand for Chablis, decimation of the vineyards from phylloxera and the interruption in production due to World War II. François still saw the potential of the region and took advantage of low land prices in the 1960s and 1970s to expand the estate, including parcels in some of the Chablis Grand Cru vineyards.
TERROIR
Surface: 1.11 hectares
The estate operates 2 plots of Chablis Village. They both enjoy a very nice location. The first, the largest, on the reverse side of the Premier Cru Monts Mains, was planted in the early 2000s. The second, in the valley opposite the Premier Cru Forêt, was planted in the late 1980s.
VITICULTURE
The vineyard is worked in a traditional and reasoned way: plowing, budding, careful trellis, green work, controlled yields, manual harvesting... Anxious to find the right maturity / acidity ratio specific to Chablis wines, everything is done to obtain the most beautiful grapes.
From Petit Chablis to Grands Crus, all plots and wines are subject to the same attention, the same concern for detail and work well done.
WINEMAKING
Vinification is done with a minimum of intervention. After fermentations in vats, the wines are aged for 10 months in barrels and bottled the following spring.
TASTING & FOOD PAIRINGS
This shows some exotic fruit with apricots and green mangoes, as well as peaches. The palate is super sturdy, very fleshy and very rich with such plush, peach and nectarine flavors and a very drinkable feel already.
Aromas of crisp orchard fruit and citrus mingling with notes of fresh bread and struck match introduce the 2018 Chablis Village, a medium to full-bodied, ample and precise wine that's bright and chalky. As I predicted from barrel, this is comparatively open out of the gates for a young Raveneau wine, but it will still reward at least a modicum of patience.
