ESTATE HISTORY
Founded at the end of the sixties, Domaine Olivier originates in the few vineyards left by Antoine Chevalier Moreau to his grandson Hervé.
By purchasing plots and new plantations, the estate first stretched out on Santenay then on Savigny-les-Beaune, Pommard and Nuits-Saint-Georges. During the development of their activity, the Oliviers endeavoured to exploit old terroirs, historically renowned for the production of Santenay white wines. These terroirs were abandoned for almost a century.
For a few years now, Antoine and Rachel Olivier have been managing all of the activities of the Domaine with one aim: Combining modernity and respect of Burgundian soils; and with the hope that you will enjoy tasting our wines as much as we enjoyed making them.
TERROIR
Clay & limestone.
VITICULTURE
Organic farming. Cultivation according to ancestral methods, without chemical weeding or synthetic product.
WINEMAKING
Manual harvest, transport of the grapes in small crates, sorting on systematic table at reception. Slow pressing - Vinification exclusively in casks with regular stirring until the end of the malolactic fermentation.
Long ageing of 18 months – The wine was 100% barrel aged for 12 months in 350-liter barrels of which 20% were new oak. Without racking, end of tank aging 6 months. Estate bottled after lightly fined and filtered.
TASTING & FOOD PAIRINGS
Aspect: Pale yellow
Nose: Open on notes of ripe fruit
Palate: Lively aromas of juniper and minerality with complementing oak leaf to a beautifully clean and citrus finish.
Great as an aperitif, pairs well with grilled fish, mussels, poultry in cream.
Ideal temperature: 12 to 14 °C
Conservation : 3 to 4 years old
