VITICULTURE

The vines have an average age of 40 years. An extremely careful plantation management policy guarantees, in addition to the quality of the wines, a regularity of the volumes produced.

Organic and biodynamic practices.

All operations are carried out in the purest respect of traditions, based as much as possible on the astral movements and the lunar calendar.

WINEMAKING

100% Barrel fermentation (40% new oak barrels / 60% barrels aged 1 and up to 5 years). Maturing on fine lees for 14 months in barrel and 4 months in tank. The origin of the wood used is mainly from the Allier-Centre France.

TASTING & FOOD PAIRINGS

Pale golden yellow. The nose is extraordinarily complex and intense with white flowers and dry fruits (walnut, chestnut). On the palate the wine is subtle, powerful, firm and concentrated.

The wine's golden colour conceals within it scents of bourbon vanilla and sandalwood. Upon tasting, initial flavours of star anise and liquorice coat the taste- buds. As the mouth begins to moisten once more, one is aware that this wine is worthy of its status.

Without doubt, this wine will achieve magnificence if allowed to mature in a cellar for 10 years.

This year, this Chevalier owes everything to its position on
the hillside. Its intense nose blends the freshness of
limestone, liquorice and wild herbs. Its breadth of flavour
and length are extreme. This is certainly the best vintage
since 2010.
