ESTATE HISTORY
Founded in 1935 by Antoine Clavelier, the Maison Clavelier was taken over in 2001 by Henri-Noël and Isabelle Thomas. Driven by their passion for wine, they combine art and tradition with respect for the terroirs to o er the palates of connoisseurs the greatest wines of Burgundy.
In 2020 and after several years at the head of the House and Domaine Clavelier, Isabelle Thomas handed over this 2.8 hectare estate to her son Paul to ensure its continued
existence. Quality and authenticity, the key words of Clavelier.
TERROIR
The vines, planted on calcareous soils give it the typical mineral and iodised notes that give this Chablis its
unique, distinctive personality.
VITICULTURE

WINEMAKING
After being harvested by hand, the grapes are destalked and then pressed ready for vinification in new 500 litre oak barrels. The wines are then aged for 6 to 12 months in barrels that have seen two previous vintages.
TASTING & FOOD PAIRINGS
Under its clear, pale gold robe, this wine expresses a fresh, lively and mineral nose: flint, green apple, lemon, with lime, mint and acacia notes. Age makes it a little more golden and spicy. On the palate, it has a beautiful attack and aromas that keep their freshness. It is a Chablis with a long finish; it is dry, with perfect finesse.
This Chablis is the ideal companion for fish or poultry terrines, or grilled or poached fish. It is perfect with asparagus and delicious with curries of all kinds and tandoori dishes. Of course, it is simply
magnificent as an aperitif or with cheeses, where it marries particularly well with goat’s cheese, Beaufort, Comté and Emmental.
To be served between 10°C and 12°C.
