ESTATE HISTORY
The Chavet family has been in Menetou-Salon since the 17th century. The ancestral vineyards, handed down from generation to generation, are cultivated with the greatest respect for the vine and its environment.
TERROIR
Kimmeridgian clay-limestone (small fossilized oysters) Plot : Clos de Beauregard ( 2,75 hectares).
VITICULTURE
60 years old vines cultivated according to the principles of sustainable agriculture (Terra Vitis certified).
WINEMAKING
This unique cuvée is vinified and aged without added sulphites. Pruning : Single Guyot
De-stemming and sorting of the grapes, gravity-flow grape delivery, pre-fermentation maceration at 5°C for one week. Vinification under temperature control. Alternating punching down and pumping over depending on the tasting. No added sulphites, aged for 10 months in vats.
TASTING & FOOD PAIRINGS
Nose: Spicy notes, juicy black fruits (blackberry, cherry). A spiced, mineral note. Palate: Attack expressing the purity of the fruit and juicy black cherry aromas. Beauti- ful substance expressing generously concentrated flavours and freshness. The whole is very harmonious, the finish is intense, and the tannins are smooth. The finale on the palate is tender, juicy and suave.
Originating from old vines on clay-rich soil, this Pinot Noir is characterised by great intensity and the purity of the fruit. Its rich palimpsest of aromas makes this wine the ideal companion for red meat, whether grilled, baked, or served in sauce.
Served at around 12°C as an aperitif, it marries well with charcuterie, as well as with succulent white meats such as veal. Naturally, this wine makes a great accompaniment for any cheese platter.

A winegrower does not inherit the vineyard, he or she is its guardian for future generations. It is in this spirit, and with the belief that in order to obtain a great wine it is necessary to accompany and preserve nature, that the estate has, since 2002, had Terra Vitis certification, a label that certifies that the wine is produced using sustainable viticulture techniques.
Biodiversity is our priority in the vineyard. This is why we no longer use weedkillers and favour the use of grass cover and soil management techniques. In the cellar, we accompany the natural transformation of the grapes with extreme gentleness, limiting our interven- tions to the strict minimum, according to the daily tastings.
All our wines are aged - from 6 months in vats to 18 months in amphorae and barrels - in order to reveal the depth and essence of our great terroir.
