ESTATE HISTORY

The Aegerters, a father and son team, are creators and developers. They did not inherit an estate; they built it together, each contributing his own knowledge and aspirations.

United by the same passion for nature in general and vines in particular, Jean-Luc the pioneer and Paul the visionary freely chose this profession.

They began a shared story, developed their knowledge and allowed their ideas to mature. Paul, now the sole head of the family company, is continuing this family adventure and starting a new chapter: one about a flourishing business.

TERROIR

Chablis produces exclusively white wines. The unique sub-soils provide the wines with freshness, purity and typical mineral and iodized notes. The Grands Cru plots overlook the village on the right bank of the Se-rein with optimal sunshine which will bring the power of this wine.

VITICULTURE

Sustainable farming. HVE certification.

The estate is working towards organic and biodynamic certifications. 

WINEMAKING

Once the grapes are harvested, they are pressed then placed in vats to be vinified. Aging takes place in oak barrels, 25% of which are new, for a period of 8 to 12 months.

TASTING & FOOD PAIRINGS:

Complex and expressive nose around the mirabelle plum, white flowers, and mineral nuances. On the pa-late, it presents an extraordinary structure, an alliance between roundness and noble acidity with a frame of very high finesse. Magnificent freshness in the mouth.

The finish is very long and mineral.

Pairs well with pan-fried lobster in foaming butter and its bisque served with crunchy asparagus, cheese soufflé, cannelloni with spinach and ricotta.

Ageing potential: 8 to 10 years.

Serving temperature: Between 11° and 12°C.
