VITICULTURE
Pezzi King Winery has been practicing sustainable farming techniques for many years. It has been Ken & Diane Wilson’s goal to achieve sustainability for the resulting quality wines along with a commitment to the environment for the benefit of future generations. Sustainable practices are realized in many forms, but primarily through water conservation, recycling, use of organic growing practices including encouraging pest control through attracting raptors in the vineyards.
WINEMAKING
Manual harvest in the cool hours of night though the early morning.
Equipped with headlamps, seasoned vineyard workers take only the finest fruit from the vines as they work diligently through the rugged terrain of the hillside vineyard. The grapes arrive at the winery in half-ton crush bins, where they are meticulously sorted to ensure the removal of leaves before being de-stemmed. The grapes go through a “cold soak” in chilled stainless steel tanks, allowing for the extraction of color and flavors before the indigenous yeast starts the fermentation.
The temperature is under constant control, allowing for a slow, cool fermentation that retains best and most desired flavors and characteristics. After the fermentation is complete, the wine goes into French oak barrels for the next 18 months before being blended and bottled.

Winemaker Chris Barrett’s passion and expertise are present in every bottle he produces.
