ESTATE HISTORY
Family estate since 1830, generations of Chevrot have succeeded. Pablo and Vincent Chevrot, both holders of a degree in oenology, have managed the estate for more than 10 years. The new generation embodied by Pablo and Vincent started in 2008 the certification in Organic Agriculture.
TERROIR
Located at the southern gateway to the Côte de Beaune, the 20 ha vineyard produces 15 Appellations d'Origine Contrôlée. The terroir is clay-limestone mainly located on outcrops dating from the Upper Triassic (-230 to -195 million years) and the Lower Jurassic (-195 to -175 million years).
VITICULTURE
The vines are 30 years old on average, the oldest vine planted by the Grandfather 75 years ago testifies to the care given to viticulture both in terms of controlling yields and respecting the terroir (soil maintenance and protection of the integrated vineyard).
The new generation embodied by Pablo and Vincent started in 2008 the certification in Organic Agriculture.
WINEMAKING
Domaine CHEVROT et FILS revolves around a bicentennial building with exceptional vaulted cellars where the wines are housed and aged in oak barrels (20% renewed each year). Since then, the Estate has had a fully thermo-regulated vat room and bottle cellar.
TASTING & FOOD PAIRINGS
Hautes Côtes de Beaune immediately offers a nose of black fruits, where blackberry and blackcurrant compete. The perfect maturity of the is reflected in the mouth, dense and elegant, on a concentrated fruit of cherry and wild strawberry that nothing disturbs. The finish, ripe and generous, is punctuated by a finely saline structure which, if it allows cellaring for a few years, should not however prevent you from uncorking the bottle this summer to enjoy its exuberant youth.
