ESTATE HISTORY

VITICULTURE
Organic & biodynamic farming practices. All operations are carried out in the purest respect of traditions, based as much as possible on the astral movements and the lunar calendar.
The vines have an average age of 40 years. An extremely careful plantation management policy guarantees, in addition to the quality of the wines, a regularity of the volumes produced.
WINEMAKING
100% Barrel fermentation (30% new oak barrels / 70% barrels aged 1 and up to 5 years). Maturing on fine lees for 14 months in barrel and 4 months in tank.
The origin of the wood used is mainly from the Allier-Centre France.
TASTING & FOOD PAIRINGS

Suggested as an aperitif, with blanquettes, poultry or fish in cream sauce, salmon with sorrel, foie gras, lobster or chicken with morrel mushrooms.
To be served at 13~15C°
