Place called : « Le Clos des Boucherottes »
Location : at the end of Pommard, toward Beaune. Overlooked to the West by “Le Clos des Mouches”, surrounded to the South and East by “Les Petits Epenots”.
Area : 1,81 hectares
Altitude : 250 meters in gentle slope
Exposure : Southeast
Soil: clay-limestone mixed with rock debris.
Average yield : 40 hl/hectare
VITICULTURE
Sustainable Farming: Certification HVE3
The vines are pruned in Guyot, disbudded and trellised using traditional Burgundian technique. Regular dogging of the soils.
WINEMAKING
Manual harvest. The grapes are 100% destemmed followed by a pre-fermentation maceration for 3 to 6 days at 13°C. Vinified in stainless steel or concrete tanks, with punching of the cap and pumping over adjusted to daily tasting, the fermentation lasts between 2 and 3 weeks at a maximum temperature of 33/34°C.
The malolactic fermentation takes place during the 12 months aging in oak barrel, of which 5 to 10 % of new oak barrels.
TASTING & FOOD PAIRINGS
The microclimate generated by the Clos confers a particular personality to this Pommard 1st Cru. At the beginning it is round, long and silky and develops a pretty mellow. Its power expresses itself in the finale that brings a high amplitude and a remarquable length.
To be drunk within 5 years, until 8-12 years and more.
Serving temperature: Open the bottle 2-4 hours before the meal, serving wine at a temperature of 15°C.
Food Pairing: Peppered dish, lamb, poultry, grilled beef ribs, game, pasta, cheeses such as Epoisses, Citeaux, Langres and Soumaintrain.
