ESTATE HISTORY

Since it was acquired by Marcel d'Assault in 1955 Chateau Couperie, renamed Chateau d'Assault, has not ceased to make progress. Large investments have been undertaken regularly, as much in the vineyard as in the methods and equipment necessary for vinification and ageing. But if a great wine is the result of a passion, it is also the fruit of lots of hard work, vintage after vintage.

TERROIR

Average age of vines: 35 years
Situation: On the northern slopes of Saint-Emilion
Soils: Ancient siliceous and siliceous limestone sand
Area: 27,5 hectares

While respecting the terroir and the people who have known it over the centuries, it is a question of enhancing the potential, with the humility imposed by the vagaries of nature.
As in any company, risk taking, investment and innovation are the essential keys to success. It is the right balance between tradition and progress that allows wine to develop without losing its spirit, until it achieves excellence.

WINEMAKING

In small concrete vats with internal temperature control. Malolactic fermentation in new barrels
Ageing: 70% in new barrels - 30% in one year old barrels
ageing period: 14 to 18 months

TASTING & FOOD PAIRINGS

Superbly presented.
Deep garnet red robe.
Imposing bouquet that is rich and complex with hints of fresh wood, black spice and red fruit.
Incredibly powerful and velvety on the palate with tight, chewy tannins that will need a little time to express their full depth.
A very great Bordeaux wine with a delightfully classical style.

Pairs well with classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised, and grilled dishes. Château d'Assault is also good when matched with Asian dishes, rich fish courses like tuna, mushrooms, pasta, and a diverse array of cheese.
