ESTATE HISTORY
Uniting prestige and excellence
The Chastellier family stems from the French nobility. In 1723, Charles de Chastellier owned a namesake seigneury in the parish of Vieu-Vel, in Brittany. His son Amaury, a horseman of King Louis XVI, was appointed Grand Esquire of France in 1776. He was in charge of the royal stables of Versailles. Renowned for his hard work and leadership skills, he was appointed head of the King's Pages School in 1782
TERROIR
Located in Reims, the 'City of Coronations', the school trained future cavalry elite.

VITICULTURE
Hand-harvested whole bunches adhering to strict Champagne yield caps and sustainable viticultural guidelines to preserve fruit quality and natural acidity
WINEMAKING
The winemaking process follows the traditional Méthode Champenoise, beginning with a gentle whole-bunch pressing to extract only the purest free-run juice. Primary fermentation takes place in temperature-controlled stainless steel vats to preserve vibrant fruit expression, followed by full malolactic fermentation to smooth out the acidity. To ensure consistency and depth, the base wine is blended with carefully selected reserve wines before entering its secondary fermentation in the bottle. The champagne then ages on its lees in cool chalk cellars for 18 to 24 months, acquiring its signature notes of toasted brioche and white blossoms. Finally, it is disgorged and finished with a balanced Brut dosage of approximately 8 to 10 grams of sugar per liter.
