ESTATE FAMILY
The Chavet family has been growing vine since the 17th century, in the very heart of the Menetou-Salon vineyard and has succeeded in developing a unique know-how.
The company is now spread over a 23 ha wide estate and has invested in modern equipment in order to meet with new demands and standards. Their passion has remained untouched and they are proud to produce a high-quality wine in the respect of nature and tradition.
TERROIR
Surface: 2.50 ha.Soil: Clay-limestone (Kimmeridgian limestones).
WINEMAKING
Harvest exclusively manual. Systematic sorting. Stalking of the harvest. Vinification under temperature control between 22 and 24 ° C. Alternating trapping and reassembly. Maturation of eight months in vats.
Bunching, systematic and repeated tillage under row and between rows, trimming, harvest in green, total leafing on both sides of row, elimination of "green-juice".
TASTING & FOOD PAIRINGS
Eye: Ruby color, violet hues. Nose: The nose is intense, with notes of black cherry and prunes. Discreetly spicy with peppery notes.
Palate: intense concentration of aromas. Attack on the roundness. The aromas of cherry and liquorice are confirmed in the mouth. Beautiful envelope supported by the elegance and finesse of Pinot Noir.
