ESTATE HISTORY
The brand draws its thematic inspiration from the historical Renaissance era in France, paying a stylistic tribute to the legacy of the De Médicis dynasty (most notably Catherine and Mary de Médicis, who became Queens of France).
The house utilizes the Latin motto "Festina Lente" (make haste slowly/more haste, less speed) as its foundational philosophy. This concept is meant to reflect patience in the cellar and an invitation for the drinker to slow down and savor the glass. While the brand carries this regal, historical concept, the wine itself is a contemporary, commercially savvy creation designed to deliver high-quality French bubbles at an accessible price point.
TERROIR
The terroir is situated in the Languedoc-Roussillon region in the South of France. This area benefits from a strongly Mediterranean climate with abundant sunshine and warm growing days, ensuring optimal ripeness and expressive fruit profiles for the red grape varieties. Cool evening breezes from the Mediterranean Sea help preserve the essential natural acidity required for balanced sparkling winemaking. The soil is a diverse mosaic of clay-limestone and alluvial plains characteristic of the region, which yields grapes with a naturally fruit-forward identity.
VITICULTURE
The viticulture for this sparkling rosé relies on a pan-French sourcing model, cultivating a blend of white and red grapes across multiple regions. Vineyard management adapts to these diverse zones, balancing canopy control in cooler northern sites to preserve high acidity with optimized sun exposure in warmer southern plots to develop vibrant red berry aromatics. Harvesting is precisely timed to pick the fruit at lower potential alcohol and higher natural acidity levels, ensuring a balanced, consistent blend that is insulated from localized weather disruptions.
WINEMAKING
The winemaking then shapes the final sparkling style using the Charmat method. The base wine undergoes secondary fermentation inside sealed, pressurized stainless steel tanks to capture the natural carbonation. This tank method is chosen specifically to retain the vibrant, youthful primary fruit aromas and avoid heavy, yeasty autolytic notes, concluding with a precise brut dosage before bottling.
TASTING & FOOD PAIRINGS
This sparkling wine shows a delicate pink-salmon hue with lively effervescence. The nose is highly aromatic, featuring fresh red berries like wild strawberry and raspberry alongside subtle floral notes. The palate is clean and crisp, balancing vibrant acidity and juicy fruit with refreshing minerality for a clean, dry finish.
Its crisp acidity and fruit-forward profile make food pairings highly versatile. It works beautifully as an aperitif or alongside charcuterie, goat cheese, and light hors d'oeuvres. It also pairs excellently with seafood like tuna tartare and grilled prawns, offers a refreshing counterpoint to mild Thai curries or sushi, and complements casual dishes like a summer berry salad or flatbreads.
