TERROIR
Portland limestone marl soil.
Continental climate with a hot and dry
month of July.
Situated in the department of Yonne, the Chablis vineyard spreads along the Serein River. The terroirs of the Petit Chablis appellation are located on the higher slopes or the beginnings of the plateau. They are made up of
hard, brown limestone, or sometimes silty, sandy soils, in general at an elevation of between 230 and 280 meters, with varied orientation.
VITICULTURE
Sustainable farming
WINEMAKING
Strict sorting of the grapes. Pressing in a
pneumatic wine-press, with a very low
pressure to avoid any risk of alteration.
Then, a static must settling at cold
temperature during 24 to 48 hours.
Fermentation in stainless steel tank under
temperature controlled. Then, ageing on fine
lees for 12 to 14 months.
TASTING & FOOD PAIRINGS
Colour: Pale gold colour.
Nose : Citrus notes (lemon, grapefruit) on
a mineral background (flint).
Palate: Frank and fresh attack, nice
aromatic finish.
Great with seafood, grilled or
tartare fish, snails or goat cheeses.
