WINEMAKING
The vinification of each terroir is done separately.
The alcoholic fermentation is done in steel tanks and the temperature is controlled at every stage of the vinification.
The wine stays on very fine lees all winter. This will give aromas and fat to the wine.
After tasting each tank, the blending of the terroir is done.
The aim is to get a very well balanced Sancerre, with typical aromas and minerality.
No oak at all.
TASTING & FOOD PAIRINGS
Pale yellow with green glints, this wine offers an expressive, fruity nose with floral and mineral accents. The palate is generous and supple, featuring white-fleshed fruit and a fleshy finish balanced by refreshing acidity.
Pairs perfectly with fish and sea food. In Sancerre it goes equally well with Crottin de Chavignol cheese.
Serving temperature: Serve fresh at 10°C.
