Primary fermentation takes place in temperature-controlled stainless steel vats to preserve vibrant fruit expression, followed by full malolactic fermentation to smooth out the acidity. To ensure consistency and depth, the base wine is blended with carefully selected reserve wines before entering its secondary fermentation in the bottle. The champagne then ages on its lees in cool chalk cellars for 18 to 24 months, acquiring its signature notes of toasted brioche and white blossoms. Finally, it is disgorged and finished with a balanced Brut dosage of approximately 8 to 10 grams of sugar per liter.

TASTING & FOOD PAIRINGS

Light yellow-gold.
